McLinky Monday - Super Bowl XLV Appetizers

Super Bowl XLV Appetizer Competition

Are you ready for some COMMERCIALS, I mean Super Bowl food?
Yes, Super Bowl XLV is a few short weeks away and believe it or not housewives, it is time for us to get our GAME ON and start planning our winning appetizers. After all, don't you want your dish to be the talk of the block for weeks to follow after the big event?
Super Bowl XLV is not until February 6, 2011, and The RHOK, with fellow Oklahoman special guest/judge Katie at Dishin and Dishes, is rolling out a Super Bowl XLV appetizer competition that you are going to want to participate in!
Mrs. Hart wants you to link up your original  recipe (we all borrow the "professional's" recipes and as long as we change 20% of it, it is ours, right?)
Each recipe will be reviewed on most creative, most delectable, most festive, and most presentable Super Bowl appetizer ever!
The housewives will keep this MckLinky open until midnight January 21, 2011. Then they will then narrow all entries down to two nominees based on all criteria except delectable (taste) which will then be submitted to Katie. Katie will make both recipes, taste, and then judge again using all the criteria and select a winner.  The winning entry will be featured on the RHOK on February 4, 2011, using all submitted linky pictures and links to blog. In addition, the winner of the appetizer competition will receive a RHOK necklace and a cute post-it note holder made by Mrs. Albright.

Here is an easy, fun recipe for your football par-tay:

Mini Pizza Appetizers

What you'll need:
- 4 six-inch Boboli Pizza Crusts or 6 English Muffins halved
- 1/2 cup of your favorite sauce; pizza, bbq, alfredo
- 3 green onions (chopped)
- 1/2 cup red onion (chopped)
- 1/2 cup pineapple, red/green pepper, whatever your favorite veggies
- 1/2 cup of grilled chicken (chopped)
- 1/2 cup of cooked & drained ground beef
- 1/2 cup of sliced pepperoni
Be creative include your favorite or healthy pizza toppings
- 1 1/2 cups of mozzarella cheese (shredded)
What to do:
First, preheat the oven to 400 degrees F.
For each crust, spread the pizza sauce evenly.
If you decided to make them with English Muffins, make sure you split and toast them first before adding the sauce.
Finish by topping with the remaining ingredients.
Be creative! Include your favorite pizza toppings!
Place each topping in bowls & allow your guests to create their own pizza.
Bake for about 8-10 minutes on until the cheese is melting and bubbly and the crust has turned to a golden brown on the bottom.
Cut pizzas into fourths.
Serve on fun platters and enjoy!
Recipes serve 4-6
